Bereket ve barışın simgesi Athena’nın armağanı, Herkül’ün silahı, Sezar’in tacı, Ra’nın aydınlanma simgesi, İsis’in bilgeliğidir.

…Ve insanlık zeytinle yeniden doğar, bin yıllar öncesinden Homeros’un metinlerinden seslenir bize:

“Herkese aitim ama kimseye ait değilim. Sen gelmeden önce de buradaydım, sen gittikten sonra da burada olacağım.”

It is hope that can bloom after the flood… The symbol of fertility and peace is the gift of Athena, the weapon of Hercules, the crown of Caesar, the symbol of enlightenment of Ra, the wisdom of Isis. And humanity is reborn with olives, calling out to us from Homeros’s texts from thousands of years ago: “I belong to everyone, but I belong to no one. I was here before you came, and I will be here after you leave.”

Bulunduğu yere göre değişmekle beraber genel de zeytin hasatının başladığı Kasım ayındayız. 100 yıla yaklaşmış yaşlarıyla Karamürsel ve Karamürsel Ereğli’sine özgü ve artık belki de nesli tükenmek üzere olan Kalamata ve Samanlı cinsi ağaçlarımızdan zeytinlerimizi topladık. Zeytin toplamak; tamamen el emeğinizle yorucu ama bir o kadar sizi heyecanlandıran çalışma sonucunda bahçeden sofralara giden bir yolculuk.

Although it varies according to its location, we are in November when the olive harvest begins. We collected our olives from our Kalamata and Samanlı trees, which are almost 100 years old and are unique to Karamürsel and Karamürsel Ereğli and are now about to become extinct. Picking olives; it is a journey from the garden to the table as a result of the work that is tiring but exciting with your manual labor.

Topladığımız zeytinleri yağa göndermeden önce mutlaka bir kısmını yemek için ayırıyoruz. Çizik yada kırma olarak salamurada tatlanan zeytinlerimiz afiyetle yemek üzere soframızı şenlendirecek. 🙂 Mis gibi kendi emeğiniz zeytinyağınız ve zeytininiz, kekik, pulbiber birde kızarmış ekmeğiniz varsa karın doyurmak için başka bir şeye ihtiyaç duyacağınızı sanmıyorum belki bir parça peynir de ekleyebilirsiniz yanına. ❤

Before we send the olives we collect to oil, we always reserve some of them for eating. Our olives, which are flavored in brine as scratched or crushed, will cheer up our table to eat with pleasure. 🙂 I don’t think you will need anything else to fill your stomach if you have olive oil and olives, thyme, chili pepper and toasted bread, maybe you can add a piece of cheese with it. ❤

Kalan zeytinlerimizi yağa götürmak üzere kasalara yada çuvallara dolduruyoruz. Tabi ki zeytinlerin bekletilmeden yağa gitmesi önemli. Yağ kalitesinin bozulmaması için toplanan zeytinlerin ıslak olmaması ve küflenmemesi, çürümemesi gerekiyor. O nedenle kasalar da taşımak en doğrusu olsada yağ fabrikasına hemen götürüyorsanız çuval ile de taşıyabilirsiniz.

We stuff our remaining olives into crates or sacks to take them to oil. Of course, it is important that the olives go to the oil without waiting. In order not to deteriorate the oil quality, the olives collected must not be wet, moldy or rotten. Therefore, even though it is best to carry it in crates, if you take it to the oil factory immediately, you can also carry it with a sack.

Ve artık binbir emekle toplanan zeytinlerimizin yağ sıkım fabrikasına doğru yolculuğu başlar, beklemeden sıkılıp yağa dönüşebilmesi için. 🙂 Yağ fabrikasına ulaşan zeytinler önce tartılıyor. Daha sonra yıkama makinesinde hem yıkanırken içine karışan yaprak gibi yabancı maddelerinden de arındıktan sonra doğru yağ olmak üzere zeytin sıkma makinesine gidiyor. Burdan çıkan yağda tekrar filitreden süzüldükten sonra istediğiniz ebat tenekelere doldurularak ambalajlanıyor.

And now, the journey of our olives, which are collected with a lot of effort, to the oil pressing factory begins, so that they can be pressed into oil without waiting. 🙂 The olives that reach the oil factory are first weighed. Then, it goes to the olive squeezing machine with the right oil after it is purified from foreign materials such as leaves mixed in it while being washed in the olive washing machine. After the oil coming out of here is filtered through the filter again, it is packed in tin cans of the size you want.

Böylece yağlarımızıda teslim aldıktan sonra bu seneki zeytin hasatımızı tamamlamış oluyoruz. Yoğun bir çalışma ve emek harcadık, yorulduk. Şimdi bir daha ki zeytin hasat mevsimine kadar keyifle kendi el emeğimizin karşılığı ürünlerimizin tadını çıkarma sırası.

Thus, after we receive our oils, we complete our olive harvest this year. we worked very hard and effort, we got tired. Now it’s time to enjoy our products with pleasure until the next olive harvest season.
